What are absolute favorite car/track/mod/AI settings?

I have gone a bit nuts and downloaded a ton of tracks, mods, and cars. I'm now curious as to what are your top 1-2 favorite car/mod/track/AI settings. I'm hoping that people will list any AI modifications they have done as well. My goal is to have some great combinations to race for both myself and anyone else who is interested.
